Giving Seed: Chaga Banana Super Seed Snack


These granola bites are a healing nourishing version of banana bread. With a healthy dose of the king healer mushroom, chaga, is a legendary tonic food that delivers potent medicine! Adding chaga into your diet provides balanced energy levels and an overall optimal state of health!


RECIPE:

1 1/2 cups mashed ripe banana (around 3 large bananas)

3 tablespoons melted coconut oil

1 teaspoon pure vanilla extract

3 tablespoons maple syrup

2 cups gluten-free rolled oats

1/4 cup dried blueberries

1/2 cup walnuts, chopped

1/2 cup pumpkin seeds

1/2 cup sliced almonds

1/4 cup hemp hearts

1 teaspoon cinnamon

2 tablespoons Sunpotion Chaga

1/4 teaspoon fine sea salt


DIRECTIONS:

Preheat the oven to 350°F. 

In a large bowl, mash the banana until smooth. Make sure you have 1 1/2 cups, then stir in the coconut oil, vanilla, and maple syrup.

Place the oats into a food processor (or blender set on the lowest speed) and pulse until the oats are coarsely chopped, but still have lots of texture. Stir the chopped oats into the banana mixture until fully incorporated.

Stir the dried blueberries, walnuts, pumpkin seeds, almonds, hemp hearts, cinnamon, chaga, and salt into the banana-oat mixture until thoroughly combined. The dough will be very heavy and a bit wet.

Spoon the mixture into muffin sleeves; I used re-usable silicone muffin sleeves. With lightly wet hands, smooth out until even and uniform. Press down on the dough until compacted.

Bake for 18-25 minutes, until firm and lightly golden along the edges. Enjoy these delicious treats!
